  • 1 cup jasmine rice or basmati rice
  • 1 cup coconut milk full-fat for creaminess
  • 1 cup water
  • 1 teaspoon salt to taste
  • 1 tablespoon sugar optional, for sweetness

Method
 

Cooking the Rice
  1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice, coconut milk, water, salt, and sugar (if using).
  3. Bring the mixture to a boil over medium-high heat.
  4. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
  5. Remove the saucepan from heat and let it sit, covered, for 5 minutes.
  6. Fluff the rice with a fork before serving.
