  • 1 cup bell peppers diced
  • 1 cup spinach fresh
  • 1 cup onion diced
  • 1 cup cheddar cheese shredded
  • 2 tablespoons olive oil for cooking
Egg and Avocado Toast
  • 4 large eggs fresh
  • 4 slices whole grain bread
  • 2 medium avocados ripe
  • 1 teaspoon lemon juice freshly squeezed
  • 1 teaspoon salt
  • 1 teaspoon black pepper freshly ground

Method
 

Scrambled Eggs
  1. In a mixing bowl, whisk together eggs, milk, salt, and pepper until well combined.
  2. Heat butter in a skillet over medium heat until melted.
  3. Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are set but still soft.
  4. Remove from heat and serve warm.
Vegetable Omelette
  1. In a mixing bowl, whisk together eggs.
  2. Heat olive oil in a skillet over medium heat.
  3. Add diced onions and bell peppers, sautéing until softened.
  4. Add spinach and cook until wilted.
  5. Pour the eggs over the vegetables and cook until the edges are set.
  6. Sprinkle cheese on top, fold the omelette in half, and cook until the cheese melts.
