Method
Prepare the Vegetables
- Wash and slice the cucumbers thinly. Place them in a mixing bowl.
- Julienne the carrots and thinly slice the red bell pepper. Add to the bowl with cucumbers.
- Chop the green onions and cilantro, then add them to the bowl.
Make the Dressing
- In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, minced garlic, and red pepper flakes.
- Taste and adjust seasoning if necessary.
Combine and Serve
- Pour the dressing over the salad ingredients and toss gently to combine.
- Sprinkle toasted sesame seeds on top before serving.
Notes
For extra crunch, you can add sliced radishes or serve with crushed peanuts on top.
