  • 1 medium onion, finely chopped
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 1 cup low-sodium vegetable broth
  • 2 lbs Yukon Gold potatoes, peeled and cubed
  • 4 tbsp butter
  • 1/4 cup milk
  • 1 tsp fresh thyme (or 1/2 tsp dried)
  • 1 tsp fresh rosemary (or 1/2 tsp dried)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet over medium heat, sauté onions and carrots in oil until softened (about 5 minutes).
  3. Add ground lamb or beef and garlic; cook until browned (7–10 minutes), breaking up any large chunks.
  4. Stir in frozen peas, thyme, rosemary, salt, and pepper.
  5. Pour in vegetable broth; let simmer for about 10 minutes until slightly thickened.
  6. Boil peeled potatoes in salted water until tender; drain and mash with butter and milk until smooth. Season with salt and pepper.
  7. Spread meat mixture into a baking dish; top with mashed potatoes, creating peaks for crispiness.
  8. Bake for 25–30 minutes until top is golden brown.
