  • 2 tsp fresh rosemary (or 1 tsp dried)
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a heavy pot over medium-high heat, heat olive oil and sear the chuck roast until browned on all sides.
  3. Add onions, carrots, and garlic around the roast; sauté until fragrant.
  4. Pour in the beef broth until it reaches halfway up the roast. Sprinkle thyme and rosemary on top.
  5. Cover with a lid or aluminum foil and bake for 3-4 hours until fork-tender.
  6. Remove from oven, let rest briefly, slice or shred, and serve with your favorite sides.
