- 1 medium onion, finely chopped
- 2–3 cloves garlic, minced
- 1 cup sour cream (full-fat)
- 1 cup low-sodium beef broth
- 8 oz wide egg noodles
- 2 tbsp flour
- 2 tbsp butter
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil and butter in a large skillet over medium-high heat. Sauté the beef in batches until browned (3-4 minutes). Remove and set aside.
- In the same skillet, add more butter if needed. Sauté onions and garlic until translucent (3-5 minutes).
- Add mushrooms and cook until golden brown (5 minutes). Sprinkle flour and stir for 1 minute.
- Gradually pour in the beef broth while scraping the pan's bottom. Simmer for about 5 minutes until thickened.
- Lower heat, mix in sour cream until smooth, then return the beef to the pan and heat gently (2-3 minutes).
- Cook egg noodles according to package instructions; drain without rinsing. Combine with the sauce before serving.
