  • 14 oz firm tofu, pressed and cubed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 2 medium carrots, thinly sliced
  • 3 tbsp low-sodium soy sauce
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, minced
  • 2 tbsp sesame oil
  • Cooked rice or noodles for serving

Instructions

  1. Press the tofu for 15 minutes to remove excess moisture; cut into cubes.
  2. Heat sesame oil in a large skillet over medium-high heat until shimmering.
  3. Add the tofu cubes in a single layer; cook undisturbed for about 5 minutes until golden brown.
  4. Stir in minced garlic and ginger; sauté for 30 seconds before adding bell peppers, broccoli, and carrots.
  5. Stir-fry until veggies are tender-crisp.
  6. Pour in soy sauce; toss to coat evenly and cook for an additional 2 minutes.
  7. Serve immediately over rice or noodles.
