  • 2 cups day-old jasmine rice
  • 1 cup shrimp, peeled and deveined
  • 1 cup mixed vegetables (peas, carrots, bell peppers)
  • 2 large eggs
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 2 green onions, chopped
  • 1 tsp sesame oil

Instructions

  1. Cook jasmine rice according to package instructions; refrigerate overnight for best texture.
  2. Thaw and pat dry shrimp if using frozen.
  3. In a large skillet or wok over medium heat, add vegetable oil. Sauté garlic and ginger until fragrant (about 30 seconds).
  4. Add mixed vegetables and shrimp; cook until shrimp is pink and veggies are tender-crisp (3-5 minutes).
  5. Push ingredients to one side of the pan; scramble eggs on the other side until cooked through.
  6. Add chilled rice, soy sauce, and sesame oil; stir-fry everything together for about 5 minutes until well combined.
