  • lbs boneless, skinless chicken thighs
  • 2 tbsp fresh ginger, minced
  • 4 cloves garlic, minced
  • ¼ cup low-sodium soy sauce
  • 2 tbsp honey
  • 1 tbsp sesame oil
  • 2 cups mixed vegetables (bell peppers, broccoli)

Instructions

  1. Chop the chicken into bite-sized pieces and mince the garlic and ginger finely.
  2. In a bowl, combine chicken, soy sauce, honey, minced garlic, and ginger. Marinate for at least 30 minutes.
  3. Heat sesame oil in a large skillet over medium-high heat. Add bell peppers and broccoli; cook for about 3-4 minutes until slightly softened.
  4. Add marinated chicken to the skillet and stir-fry for 7-8 minutes until golden brown and cooked through.
  5. Pour leftover marinade into the pan and simmer for about 5 minutes until thickened.
  6. Serve over rice or noodles and garnish with sesame seeds or green onions.
