  • 1 cup full-fat coconut milk
  • 3 large eggs
  • 1 cup unsweetened shredded coconut
  • 1/2 cup melted butter
  • 8 oz cream cheese frosting (store-bought or homemade)
  • Extra shredded coconut for topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round baking pans.
  2. In a large bowl, mix together the cake mix, coconut milk, melted butter, and eggs until smooth (about 2-3 minutes).
  3. Gently fold in the shredded coconut.
  4. Divide batter evenly between prepared pans and smooth the tops.
