  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tbsp unsweetened cocoa powder
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 8 oz dark chocolate, melted
  • 3 large eggs, at room temperature
  • 1 tsp vanilla extract
  • 1 cup heavy cream, whipped
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 350°F (175°C). Line a springform pan with parchment paper.
  2. In a bowl, combine graham cracker crumbs, melted butter, and cocoa powder. Press into the bottom of the pan.
  3. Bake the crust for 10 minutes and allow it to cool.
  4. Beat softened cream cheese until smooth; gradually add sugar until fluffy.
  5. Stir in melted dark chocolate and eggs one at a time.
  6. Fold in whipped cream and fresh raspberries gently.
  7. Pour the filling over the cooled crust and bake for 50-60 minutes until set but slightly jiggly.
  8. Cool completely before refrigerating overnight.
