  • 1 cup basmati or jasmine rice
  • 2 cups fresh spinach
  • 12 bell peppers (any color)
  • 1 cup cherry tomatoes
  • ½ cup crumbled feta cheese
  • ¼ cup pitted kalamata olives
  • 2 tablespoons olive oil
  • 2 cups vegetable broth or water
  • Juice of 1 lemon

Instructions

  1. Rinse the rice under cold water until clear. Chop bell peppers and halve cherry tomatoes.
  2. In a large skillet over medium heat, heat olive oil. Sauté bell peppers for 4-5 minutes; add cherry tomatoes and garlic powder, cooking until fragrant.
  3. Stir in the rinsed rice and vegetable broth; bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes until liquid is absorbed.
  4. Add spinach to the skillet, fluffing rice gently with a fork. Drizzle with lemon juice; cover for another 2-3 minutes until spinach wilts.
  5. Fold in feta cheese and kalamata olives before serving.
