- 6 large flour tortillas
- 2 cups red enchilada sauce (store-bought or homemade)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 1 tsp cumin
- 1 tsp chili powder
- 2 tsp olive oil
- Sour cream (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet over medium heat, add olive oil and sauté chopped onions and minced garlic until translucent (about 5 minutes).
- Add ground beef to the skillet, breaking it apart while cooking; season with cumin and chili powder until browned (about 6-8 minutes).
- Spread some enchilada sauce at the bottom of a baking dish. Fill each tortilla with beef mixture, roll tightly, and place seam-side down in the dish.
- Pour remaining sauce over enchiladas and sprinkle shredded cheese on top.
- Bake for about 20 minutes or until bubbly and golden brown.
- Serve hot with optional sour cream.
