  • 4 boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes (rehydrated if dried)
  • 2 cups fresh spinach
  • 4 garlic cloves (minced)
  • 1/2 cup grated Parmesan cheese
  • 2 cups low-sodium chicken broth
  • 1 tsp dried Italian herbs (oregano, basil, thyme)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper. Cook for 6-7 minutes on each side until golden brown. Remove from skillet.
  2. In the same skillet, add minced garlic and rehydrated sun-dried tomatoes; sauté for 1-2 minutes until fragrant. Stir in orzo until coated in oil.
  3. Pour in chicken broth and heavy cream; scrape browned bits from the pan. Simmer for about 10 minutes until orzo is al dente.
  4. Add fresh spinach; stir until wilted (about 2 minutes). Fold in Parmesan cheese until melted.
  5. Return chicken to the skillet; simmer for an additional 3-5 minutes to meld flavors.
