Ingredients

  • 2 cups cucumbers, thinly sliced (about 2 medium cucumbers)
  • 1/2 cup red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh dill, chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Wash and thinly slice the cucumbers. If desired, peel them before slicing.
  2. Slice the red onion very thinly. Soak in cold water for about 10 minutes if you prefer a milder flavor.
  3. In a large bowl, combine cucumbers, soaked red onions, cherry tomatoes, and fresh dill.
  4. In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper until well combined.
  5. Pour the dressing over the vegetables and gently toss to coat without crushing the tomatoes.
