- 1 cup long-grain rice
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1 cup mixed vegetables (carrots & peas)
- 1 tsp paprika
- 1 tsp dried thyme
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, then sear until golden brown on both sides. Remove from skillet.
- In the same skillet, sauté diced onion and minced garlic until translucent and fragrant (about 3 minutes).
- Stir in the rice until coated with oil, then gradually add chicken broth while scraping any browned bits from the bottom of the skillet.
- Nestle the seared chicken back in with mixed vegetables. Cover tightly, reduce heat to low, and simmer for 20-25 minutes or until rice is tender.
- Once cooked, let sit covered for 5 minutes before fluffing with a fork. Serve hot.
