Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain rice
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup mixed vegetables (carrots & peas)
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, then sear until golden brown on both sides. Remove from skillet.
  2. In the same skillet, sauté diced onion and minced garlic until translucent and fragrant (about 3 minutes).
  3. Stir in the rice until coated with oil, then gradually add chicken broth while scraping any browned bits from the bottom of the skillet.
  4. Nestle the seared chicken back in with mixed vegetables. Cover tightly, reduce heat to low, and simmer for 20-25 minutes or until rice is tender.
  5. Once cooked, let sit covered for 5 minutes before fluffing with a fork. Serve hot.
