  • 2 tbsp soy sauce (low-sodium)
  • 2 tbsp sriracha sauce (adjust to taste)
  • 200g ramen noodles (fresh or dried)
  • 1 cup sliced bok choy or mushrooms
  • 2 green onions (thinly sliced)
  • 2 soft-boiled eggs (optional)

Instructions

  1. In a large pot, bring chicken broth to a simmer over medium heat. Stir in soy sauce and sriracha.
  2. Add ramen noodles and cook according to package instructions until tender but slightly chewy (about 3-4 minutes).
  3. During the last minute, add sliced bok choy or mushrooms to soften.
  4. For soft-boiled eggs, boil them separately for 6-7 minutes, then cool and peel.
