  • 1 large red bell pepper, cut into chunks
  • 1 large yellow bell pepper, cut into chunks
  • 1 medium zucchini, sliced thickly
  • 1 cup cherry tomatoes
  • 1 cup button or cremini mushrooms, halved
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried Italian herbs

Instructions

  1. Thoroughly wash all vegetables.
  2. Cut bell peppers into large chunks and zucchini into thick slices.
  3. In a bowl, combine olive oil, salt, pepper, and herbs; toss in the veggies to coat evenly.
  4. Let marinate for at least 30 minutes.
  5. Preheat grill to medium-high (400°F).
  6. Thread veggies onto skewers; soak wooden skewers in water for 30 minutes prior to prevent burning.
  7. Grill skewers for 10-12 minutes, turning occasionally until tender and charred.
