Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice, coconut milk, water, and salt. Stir to mix well.
  3. Bring the mixture to a boil over medium heat, stirring occasionally. Once boiling, reduce the heat to low.
  4. Cover tightly with a lid and simmer for 15-20 minutes or until all liquid is absorbed; steam holes will appear on top.
  5. Remove from heat but keep covered for an additional 10 minutes. Fluff gently with a fork before serving.
  6. Garnish with freshly chopped cilantro if desired.
