  • 1 cup red or green lentils (200g)
  • 1 can (400ml) full-fat coconut milk
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons curry powder
  • 4 cups low-sodium vegetable broth (about 960ml)

Instructions

  1. Peel and dice the sweet potatoes into small cubes.
  2. Rinse the lentils under cold water until clear.
