  • 4 cups kale (chopped, stems removed)
  • 1 large onion (diced)
  • 3 cloves garlic (minced)
  • 4 cups chicken or vegetable broth
  • 2 medium potatoes (diced)
  • 1 can (14 oz) diced tomatoes
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for another minute until fragrant.
