  • 4 large bell peppers (any color)
  • 1 lb lean ground turkey
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes (no added salt)
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 2 tsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut tops off bell peppers and remove seeds. Place them upright in a baking dish.
  3. In a skillet over medium heat, add olive oil and sauté onions until translucent (3-4 minutes), then add minced garlic for an additional minute.
  4. Add ground turkey to the skillet; cook until browned and fully cooked (6-8 minutes).
  5. Stir in diced tomatoes, cumin, paprika, salt, and pepper; simmer for 5 minutes.
  6. Spoon the turkey mixture into each pepper until slightly overflowing; top with shredded cheese.
  7. Bake for 25-30 minutes until peppers are tender and cheese is golden brown.
