  • 34 boneless skinless chicken breasts
  • 2 ripe avocados
  • 4 large flour or whole wheat tortillas
  • 2 cups fresh lettuce (romaine or iceberg)
  • 1 cup cherry tomatoes (halved)
  • Your favorite dressing (light vinaigrette or yogurt-based)

Instructions

  1. Season chicken breasts with salt and pepper. Grill over medium-high heat for 6-8 minutes per side until fully cooked.
  2. While the chicken cooks, wash and chop lettuce and halve cherry tomatoes.
  3. Mash the avocados in a bowl, adding salt and lime juice to taste.
  4. Lay tortillas flat and spread mashed avocado on each one. Layer with grilled chicken slices, lettuce, and cherry tomatoes.
  5. Drizzle dressing over the fillings, roll the tortilla tightly from one side while tucking in the ends, then slice in half.
