- 3–4 boneless skinless chicken breasts
- 2 ripe avocados
- 4 large flour or whole wheat tortillas
- 2 cups fresh lettuce (romaine or iceberg)
- 1 cup cherry tomatoes (halved)
- Your favorite dressing (light vinaigrette or yogurt-based)
Instructions
- Season chicken breasts with salt and pepper. Grill over medium-high heat for 6-8 minutes per side until fully cooked.
- While the chicken cooks, wash and chop lettuce and halve cherry tomatoes.
- Mash the avocados in a bowl, adding salt and lime juice to taste.
- Lay tortillas flat and spread mashed avocado on each one. Layer with grilled chicken slices, lettuce, and cherry tomatoes.
- Drizzle dressing over the fillings, roll the tortilla tightly from one side while tucking in the ends, then slice in half.
