Ingredients
- 2 pounds ripe Roma or vine-ripened tomatoes
- 1 medium yellow onion
- 4 cloves of garlic
- 2 tablespoons extra virgin olive oil
- 1 cup low-sodium vegetable broth
- Fresh basil leaves
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and core the tomatoes, then cut them in half. Place cut-side up on a lined baking sheet.
