  • 2 pounds ripe Roma or vine-ripened tomatoes
  • 1 medium yellow onion
  • 4 cloves of garlic
  • 2 tablespoons extra virgin olive oil
  • 1 cup low-sodium vegetable broth
  • Fresh basil leaves
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and core the tomatoes, then cut them in half. Place cut-side up on a lined baking sheet.
  3. Peel garlic cloves and scatter around the tomatoes. Chop the onion into wedges and add it to the tray.
  4. Drizzle olive oil over the vegetables, then sprinkle with salt and pepper.
  5. Roast for 25-30 minutes until softened and slightly charred.
  6. Transfer roasted vegetables to a blender, add basil leaves and vegetable broth, then blend until smooth.
  7. Heat the blended soup in a pot over medium heat for about five minutes before serving.
